Zucchini Tots

I saw this recipe on Pinterest the other day (if you aren't following me yet you should!  Click HERE to see my 'Clean Eats' board).  They looked delicious but had cheese, whole eggs, and italian bread crumbs and I knew I could clean them up even more.  So, I started experimenting in my kitchen and these turned out GREAT!  My 2-year old loved them and I did too!  We will be making these a lot more ...[Read More]

Sweet Potato Chips

This is how I will sometimes prep my sweet potatoes for the week. I cut them into slices and sprinkled cinnamon and truvia on top (I cut up 5 sweet potatoes and only needed to use two packets of truvia). I only did one side but you could flip them and put the cinnamon/truvia on both sides if you wanted. I cooked them for about 35 minutes on 350. Once they were cooled I portioned them out and put t ...[Read More]

Roasted Brussels Sprouts

My favorite way to cook Brussels Sprouts! About one lb of Brussels Sprouts, cut ends off and cut in half. Put on foil then sprinkle 1 Tbsp olive oil and 2 Tbsp balsamic vinegar. Sprinkle black pepper, garlic powder, and sea salt on top. Cook at 400 degrees until edges are brown and crisp. Mmmmmm I could eat the whole tray cooked this way!

Chocolate Peanut Butter Egg Whites

Most people eat ice cream for their late night snack, I like this egg white PB hot mess-looking meal 🙂 I just blended six egg whites, stevia, unsweetened coca powder, almond milk together in the blender, cooked it like a pancake and added 1 Tbsp natural pb. Yum!! I try to eat every three hours. So if I end up staying up late I continue to eat every three hours to keep my metabolism revved up, I ju ...[Read More]

Salt and Vinegar Kale Chips

If you like salt and vinegar chips you will love these. Just like salt and vinegar chips, you can't stop at just one! (If you don't like salt and vinegar chips you can still make these just lightly mist with olive oil instead of the vinegar bath). This is how I did it: Preheat oven to 375 I bought a bag of pre-cut Kale just because it is easier, but if you buy it in the bunch just chop the bunch i ...[Read More]

Chocolate Orange Egg Whites

Here is another sort of funky way to eat your egg whites at night but I think it tastes good! It sort of tastes like one of those chocolate oranges you get at Christmas time. Sort of. 🙂 I went and saw The Vow tonight (so so so so good btw! My crush on Channing Tatum just got that much bigger) 🙂 the movie was sold out so we had to go to the later viewing. I didn't get home until 1:30am and was star ...[Read More]

Base Protein Bar Recipe – Add Your Own Flavors!!

Here is my base protein bar recipe (adapted from Jamie Eason's Cinnamon Swirl Recipe). Once you have this part down all you need to do is add your own extracts to create your own flavor of bars! I usually do 2-3tsp extract per batch. One very important tip:  The homemade protein bars have no preservatives in them. So, if you make them you MUST keep them in the fridge or the freezer or they will sp ...[Read More]
