The Most Delicious Healthy Egg Salad You’ve Ever Had

Healthy Egg Salad

We had so many extra hard boiled eggs this week after Easter.  I kept using them up by making my favorite egg salad recipe.  Seriously this is such a good sandwich.  I started making this when I was in college and I make it all the time (ps - you can use the same recipe and add shredded chicken (either from a can or make it yourself in a crockpot) for a chicken salad).  The key ingredient here is ...[Read More]

Lazy Man Sweet Potato Recipe

lazy man

Sweet potatoes are SO inexpensive right now! My grocery store has them for 25 cents a pound!  This is my favorite 'lazy man' (or woman) sweet potato method. Two steps: 1) wash sweet potatoes 2) throw in crockpot Done! Cook on high for 4 hours until soft. I threw in a few red potatoes here and will mash them all up together for dinner with salt, pepper, and garlic powder. Enjoy! PS - A lot of peo ...[Read More]

Easy Roasted Salmon Recipe

Easy Salmon Dinner

This is my favorite way to cook salmon.  Each summer we go home to Idaho and bring home around 200lbs of wild salmon for our freezer (check out a video of me catching a huge chinook salmon here), so as a result we cook salmon 1-2 times a week.  This is such an easy recipe but has so much flavor. Ingredients: -six 4oz (appx) salmon filets (or one giant filet as shown here) -2 lemons, ...[Read More]

Honey Lime Chicken

This is a really simple recipe that I started making last year, but is really tasty!  I think I originally found the recipe online somewhere at some point and have changed it up a little and added a few of my own ingredients to make it taste the way I like.  When I am really trying to lean down, I am pretty strict about how many grams of sugar I take in each day and might not eat a meal that had h ...[Read More]

Clean Eating Beef & Barley Soup

Beef Stew is one of my husband's favorite meals!  When it is cold outside, he asks me to make it for him all the time.  Usually I just sort of throw random ingredients together until everything tastes good, but this time I wrote down my ingredients so I could put it in a recipe post for you guys.  This soup has a tomato-base to it and the barley makes it nice and thick.  If you prefer, you could u ...[Read More]

Chicken Tortilla Soup

This is one of my favorite "not sure what to make for dinner tonight" recipes!  It tastes really good and I usually have all these ingredients in my fridge/cupboard.  Plus, it only takes about 5 minutes to throw all the ingredients together, and about 30 minutes to cook.  I posted this picture forever ago on Instagram (@nhodson1 if you aren't following me yet!) and just now finally am typing up th ...[Read More]
