Summer salads are my favorite!

 

Chop up whatever veggies you have in the fridge with some grilled chicken, black beans, corn, apple cider or balsamic vinegar, fresh basil, lime juice, sea salt and pepper.

 

In this picture, I used cucumbers, tomatoes, and bell peppers but honestly any veggies work!

 

It’s a light, and refreshing meal when summer days get super hot, and you can make it in bulk and eat it throughout the week.

The trick (I think) is to try to chop everything into nice small bite sized pieces so it’s just really easy to eat
