Getting rice (especially brown rice) to come out perfect when cooking it at home can be a daunting task, but I am here to help! This is my favorite way to cook rice without a rice cooker. It’s easy and it works, what more could we ask for?
Here’s what you will need:
- 4 cups of beef or chicken broth (32 oz.)
- 1 cup of brown rice
- 1 cup of quinoa (if you don’t have quinoa you can simply add another cup of rice)
In a medium pan mix together broth, rice, and quinoa. Turn on your burner and bring liquid to a boil. Once boiling, stir and then reduce heat to low and cover with a lid. Keep burner on low and cook for another 20 minutes, fluffing the rice once or twice during that time You will be able to tell the rice is done when you no longer have any liquid in the pan and the rice/quinoa has soaked it all up.
You want to make sure to take your rice out of the pan as soon as it is done cooking. Leaving it in the pan tends to cause the rice in the bottom of the pan to become mushy. I like to put in in a different bowl, let it cool down, then cover it and put it in the fridge to use throughout the week in dinners and lunches.
