My kids love chicken nuggets, and I knew I could make a healthier option they would enjoy just as much! These home made chicken nuggets make the perfect appetizer for adults, too!

Directions

  1. In a medium sized bowl, mix in pepper, paprika, and chili powder with the breadcrumbs.
  2. Lay a baking pan with foil (for easy clean up) and spray pan with non stick cooking spray.
  3. Roll your 1″ chicken breast pieces in flour, then dip in the egg whites, then dip in the bread crumbs, and lay on pan (sorry, your fingers will be a bit messy here!).  You may notice that you have to add slightly more flour or bread crumbs if yours starts to get clumpy from the egg whites.  That is ok, just try to add some more seasonings too in about equal amounts according to how much flour/breadcrumbs you added too so you keep the flavor.
  4. Bake at 400 degrees for 20 minutes.  Your serving size will depend on how small you cut your chicken pieces into, so just split your total pan into four equal portions and each section will be one portion size.

Note: be careful with the condiments you use here.  Ketchup can add up in sugar really quickly.  We love dipping these in mustard or if you want ketchup try to find the low-sugar type.
