It is now that time of year where we start thinking of new year resolutions and a plan to start eating healthy. This is a great recipe for just that! I also start the new year with new goals in mind and a fresh start to stay healthy and active. I am so busy running my business and chasing after my little ones, that finding quick, easy, fulfilling, healthy recipes can be hard. That is why I put together a healthy crockpot cookbook for people like you and me! This is just one of the recipes you’ll find in my new cookbook, Cook Smarter, Not Harder. This is a quick and easy chicken salsa recipe that even my kids eat!
What you’ll need:
– 2.5lbs chicken breast
– 16oz jar salsa
– one 14.5oz can dice tomatoes
1. All you do is put the three ingredients in a crockpot and cook for 3-4 hours on high or 5-6 hours on low
2. That’s it! When the chicken is cooked you can shred it with two forks and enjoy!
This is truly one of the easiest recipes I make. You can use salsa chicken in enchiladas, nachos, burrito wraps, taco salad, whole wheat wraps, the list goes on and on!
