This is a meal that we make all the time. I can throw it together faster than I could cook a frozen pizza and it’s just a really easy, simple meal.
I keep the large bags of wild caught flounder in our freezer (we find them at Sam’s Club) so that I can make this quick dinner in a pinch if I don’t have anything else prepared. The flavor of flounder is very tender and mild and doesn’t have a ‘fishy’ taste. You can substitute the flounder with any other white fish (tilapia, cod, mahi mahi, orange roughy, etc). Total cook time is 15 minutes if you have brown rice pre-cooked in bulk, around 22 minutes if you are also going to make the brown rice. Super easy!

Ingredients:
-Four 4-6oz flounder filets (thawed)
-2 lemons, quartered
-Seasoning of choice (Mrs. Dash seasonings or True Lemon seasonings are my favorite)
*Note, you can bake the filets frozen too, you will just need to add an extra 5-6 minutes to your cooking time and just make sure that they are completely cooked when done.
Instructions:
Place a sheet of aluminum foil on a baking sheet. Preheat the oven to 375 degrees. Place thawed flounder filets on aluminum foil and sprinkle with seasoning of choice (Mrs. Dash seasonings or True Lemon seasonings are my favorite). Optional: squeeze fresh lemon juice on filets before baking. Bake for 12-15 minutes until meat is flaky in the center. Serve with brown rice, baked sweet potato, and/or salad.
