Costco or Sam's Club type store Grocery List

I love shopping at stores like Costco and Sam's Club. These are the things I typically get at Costco (I can get about 80-85% of our shopping done here for our family of three): -Berries (fresh or frozen - their frozen blueberries and raspberries are usually priced pretty low) -Spinach (the bag is huge, but even if you end up throwing some away because you couldn't eat it in time, it is usually sti ...[Read More]

Easy Crockpot Salsa Chicken

I had an event Saturday and Sunday this weekend and so I didn't have much extra time to prep my meals for the week. This is a problem, because I am out of my "bulk" food that I usually cook on the weekends and eat throughout the week. So, before I head to bed I just threw one big package of boneless, skinless chicken breasts (I bought a big 5-lb package earlier in the week so it was already in my ...[Read More]

Healthy Peppermint Ice Cream

Making a healthy treat for my next small meal during halftime of the Boise State game 🙂 Just made my own variation of the "Healthy Peppermint Ice Cream" recipe from last month's Oxygen magazine - SO yummy!!! Great way to celebrate that lucky touchdown! 🙂 Ingredients: 1 cup unsweetened vanilla almond milk 1 scoop vanilla whey protein powder (I use MRM brand Rich Vanilla flavor) 1/4 tsp peppermint e ...[Read More]

Homemade Healthy Ranch Dressing/Dip

Homemade Ranch Dressing Dip (Makes approximately 7 tbsp.) *NOTE* If you find this is too thick or too thin, you can add more almond milk to make it thinner, or less almond milk to make it thicker. 4 tbsp. unsweetened almond milk 3 tbsp. non-fat plain Greek yogurt (I like Fage 0%) 1/4 tsp. onion powder 1/8 tsp. dried dill 1/2 ts. dried parsley 1/2 tsp. dried chives 1/4 tsp. sea salt 1/4 tsp. black ...[Read More]

Low Carb Curry Chicken Lettuce Wraps

I made this for lunch today and it was so good! It took me less than 15 minutes from start to finish, and this is definitely something you could cook in bulk earlier in the week and bring with you to work for lunch. Ingredients: Wrap Ingredients (makes about 5 servings): -2lb chicken breast -1 Tbsp low-sodium soy sauce -1/3 cup low-sodium chicken broth -Yellow curry powder (probably about 3 Tbsp o ...[Read More]

Pumpkin Pie Cottage Cheese

"Pumpkin Pie" Cottage Cheese I will eat this sometimes for my last meal of the day instead of frozen egg whites. I mix one serving of 1% or 2% cottage cheese (I like Lactaid brand because it is easier on my stomach but it can be hard to find) with one spoonful of raw pumpkin (make sure the canned raw pumpkin you buy doesn't have sugar added to it). *NOTE* most fat free cottage cheeses have sugar a ...[Read More]

Venison Steak Strips

Here is a dinner I like to make sometimes - it tastes really good! We have a friend who hunts a lot and so we trade salmon we catch for venison from him. I love it because venison is one of the leanest meats you can get.  You could make this recipe with top sirloin (beef) if you don't have access to venison. Ingredients: 1 lb venison roast or steaks 1-2 Tbsp low-sodium soy sauce 1-2 Tbsp Worcester ...[Read More]

Protein Packed Blueberry Cereal

For some reason I was really craving cereal this morning! So, post workout I tried this concoction and loved it! I took 3 rice cakes and broke them up in a bowl (4 rice cakes for male serving size). Added 1/4c. frozen blueberries. Then I made a protein shake with 1 scoop whey protein (I use MRM brand Rich Vanilla flavor) and 1 cup unsweetened vanilla almond milk. Poured over the 'cereal' as the mi ...[Read More]

Grilled Chicken Kabobs

Here is one of my favorite dinners to make! I usually make a whole bunch so that I can easily eat them throughout the week. Here I used 5 lbs chicken breasts, 3 bell peppers (2 yellow, 1 orange), 3 yellow squash, 2 large red onions, about 10 baby portabella mushrooms. You could use any kind of vegetables, these are just the ones I happened to have in my fridge. I cut the chicken into chunks the da ...[Read More]

Sweet Potato Chips

This is how I will sometimes prep my sweet potatoes for the week. I cut them into slices and sprinkled cinnamon and truvia on top (I cut up 5 sweet potatoes and only needed to use two packets of truvia). I only did one side but you could flip them and put the cinnamon/truvia on both sides if you wanted. I cooked them for about 35 minutes on 350. Once they were cooled I portioned them out and put t ...[Read More]
