Rosemary Sweet Potatoes

Tonight I’m grilling some venison steaks for dinner (you could do top sirloin if you don’t have access to venison). I really like making my side of sweet potatoes this way. I rinse them, chop them into bite size pieces (this was three sweet potatoes), then put them on a cookie sheet with foil on the bottom for easier cleanup. This is an easy and delicious side dish that I love and I hope you do too!

Ingredients:

  • Sweet potatoes ( I used three)
  • 1 Tbsp olive oil
  • Black pepper to taste
  • Sea salt
  • Garlic powder
  • Rosemary
  • Thyme

Directions:

1. Chop the sweet potatoes into bite-sized pieces.
2. Drizzle olive oil on top then sprinkle black pepper, sea salt, garlic powder, rosemary, and thyme (thyme is a strong herb so use sparingly).
3. Bake at 400 degrees for about 30 minutes or until the potatoes are no longer crunchy.

I do about 6 oz (weighed cooked) for one serving so there will be leftovers from this that I can eat tomorrow.

Help Manage Diabetes

Sweet potatoes are actually beneficial when it comes to diabetes! They contain fibers and magnesium, which can help manage diabetes and help keep blood sugar levels regulated. If you are diabetic, sweet potatoes can be used as a healthier substitute for your rice or carbohydrate intake.

Protects Against Cancer

That’s right! Sweet potatoes have been shown to help fight cancer. The beta-carotene in sweet potatoes is essential for protecting against cancer. This is especially beneficial in protecting men from developing prostate cancer. Other components of sweet potatoes have been shown to help fight cancer cells and stop them from spreading.

Treat Stomach Ulcers

I have already mentioned that sweet potatoes soothe the stomach, well they can also help treat stomach ulcers. The B-complex vitamin, vitamin C, calcium, potassium, and beta-carotene all help with this treatment! Sweet potatoes also have anti-inflammatory properties, which can reduce the pain and inflammation of ulcers.
