Guest Blog from Valerie at Live Fit Journey! Fun Sandwich Ideas for Kids

I am so excited for this blog post.  I’ve become online friends with Val over at www.livefitjourney.com.  We both did Jamie Eason’s 12-Week LiveFit trainer together back in 2011 and had a chance to meet at the 2012 Arnold Expo.  Her story really resonated with me because she was an athlete in college, put on weight after having her first baby, and wanted to get back into a healthier lifestyle for her family.  She is just in general a really cool and down to earth person and mom, not to mention has some seriously awesome abs and arms!

Not only does she have a great blog with healthy meal ideas, a 4-week clean eating plan, workouts, vlogs, etc but she also just created a non-profit called Generation Healthy Kids.  She does free seminars in libraries and in the community showing families creative ways to cook and incorporate healthy foods for their kids.  How awesome is that?!  Val’s 3-year old is in pre-school and she shares really cool lunch ideas all the time on her Instagram page (@val_livefitjourney) and I asked her if she would be willing to do a guest post for me!  I am really excited to share this post with you guys, and I know you will love Val’s blog as much as I do. Hi Everyone! I’m Valerie a health and fitness blogger at livefitjourney.com. I am also the founder of Generation Healthy Kids, a non-profit focused on combating childhood obesity. I am excited to be a guest blogger for Natalie today. She and I completed Jamie Eason’s LiveFit Trainer around the same time and I had the pleasure of meeting her at the 2012 Arnold Classic.

My job at Generation Healthy Kids is to educate parents, kids and the community about nutrition and physical activity. In honor of September being National Childhood Obesity Awareness Month, I want to share with you some healthy sandwich ideas for school lunches that are fun and nutritious.

Finding healthy school lunch ideas for kids can be hard. At times a simple sandwich is the easiest solution. Although sandwiches are quick and convenient, they lock creativity. Having a toddler myself I know presentation makes a big difference. My son is more likely to eat something if it appeals to him and that means making it fun. Here a few creative and healthy sandwiches your kids will love to open their lunch box to. Say goodbye to that boring peanut butter and jelly!

 

 

Pinwheel Sandwiches
Val Pinwheel Sandwich
Ingredients:
-1 whole-wheat tortilla
-Filling (hummus, mustard, or cream cheese)
-Meat (turkey, chicken, or tofu)

  1. Take filling and evenly spread on tortilla.
  2. Add meat.
  3. Roll up and slice the roll into 1-2 inch pieces.

Sandwich Kabobs
Sandwich Kabobs

Ingredients:
-1 slice of bread (cut into squares or shapes).
-3oz sliced grilled chicken or turkey meat.
-1 slice of cheese (cut into squares)
-Cherry tomatoes.

  1. Alternate all ingredients bread, chicken, cheese and tomatoes onto kabobs.

Cookie Cutter Sandwiches

Ingredients:
-2 slices of whole wheat bread
-Peanut butter
-Jelly

  1. Make sandwich and choose a cookie cutter that fits in the middle of sandwich.
  2. Press cookie cutter through sandwich.
