The Best (and easiest) Way to Cook Rice without a Rice Cooker

This is the way we cook our brown rice and it is so good this way!

Rice

Ingredients:
-4 cups beef or chicken broth (32oz)
-1 cup brown rice
-1 cup quinoa (or if you don’t have quinoa you can just do another cup of brown rice)

Instructions:
In a medium pan mix together broth, rice, and quinoa.  Turn on your burner and bring liquid to a boil.  Once boiling, stir and then reduce heat to low and cover with a lid.  Keep burner on low and cook for another 20 minutes, fluffing the rice once or twice during that time.  You will be able to tell the rice is done when you no longer have any liquid in the pan and the rice/quinoa has soaked it all up.

*note* you want to make sure to take your rice out of the pan as soon as it is done cooking.  Leaving it in the pan tends to cause the rice in the bottom of the pan to get really mushy (because the heat stays trapped in there and continues to cook it).  I put it in a different bowl, let it cool down a bit, then cover and put in the fridge to use throughout the week in dinners and lunches.
