Here is what my egg white puffs look like. Sometimes I will eat my egg whites this way at night, right before I go to bed. This isn’t my favorite egg white recipe, but it works in a pinch. If you wanted, you could add peanut butter or any other extracts for different flavors. This is a recipe I got from Tambrika Simpson in the Jamie Eason LiveFit Facebook group and I adapted it a little bit for lower carbs so I could eat it right before bed. They taste pretty good and offer another way to mix up your egg whites at night for an easy and healthier dessert!
Ingredients:
- 4 egg whites
- 1/2 scoop vanilla protein powder
- 1 packet Truvia (optional)
- 1/4 cup unsweetened vanilla almond milk
- 1 Tbsp unsweetened cocoa powder
Directions:
1. Mix all of the ingredients together in a blender.
2. Pour batter in a muffin tin (double batch shown here).
3. Bake at 350 degrees for 15-20 minutes.
These are also a good option to bring with you if you are traveling and don’t want to eat hard boiled egg whites while on the road.
One serving makes 5-6 puffs.
