Sweet Potato Chips

This is how I will sometimes prep my sweet potatoes for the week. I cut them into slices and sprinkled cinnamon and truvia on top (I cut up 5 sweet potatoes and only needed to use two packets of truvia). Roasted Brussels Sprouts

My favorite way to cook Brussels Sprouts! About one lb of Brussels Sprouts, cut ends off and cut in half. Put on foil then sprinkle 1 Tbsp olive oil and 2 Tbsp balsamic vinegar. Sprinkle black pepper, garlic powder, and sea salt on top. Cook at 400 degrees until edges are brown and crisp. Mmmmmm I could eat the whole tray cooked this way!

Delightfuly Spicy Flounder

Dinner tonight. Two 4oz wild flounder filets (I get mine frozen at Costco). Cooked on stovetop in lime juice, oregano, chili powder, and black pepper. Asparagus, red pepper, and mushrooms thrown in pan for last few minutes. Brown rice on side. Yum!! Was really fast to cook up too.
