"Pumpkin Pie" Cottage Cheese I will eat this sometimes for my last meal of the day instead of frozen egg whites. I mix one serving of 1% or 2% cottage cheese (I like Lactaid brand because it is easier on my stomach but it can be hard to find) with one spoonful of raw pumpkin (make sure the canned raw pumpkin you buy doesn't have sugar added to it). *NOTE* most fat free cottage cheeses have sugar a ...[Read More]
Here is a dinner I like to make sometimes - it tastes really good! We have a friend who hunts a lot and so we trade salmon we catch for venison from him. I love it because venison is one of the leanest meats you can get. You could make this recipe with top sirloin (beef) if you don't have access to venison. Ingredients: 1 lb venison roast or steaks 1-2 Tbsp low-sodium soy sauce 1-2 Tbsp Worcester ...[Read More]
For some reason I was really craving cereal this morning! So, post workout I tried this concoction and loved it! I took 3 rice cakes and broke them up in a bowl (4 rice cakes for male serving size). Added 1/4c. frozen blueberries. Then I made a protein shake with 1 scoop whey protein (I use MRM brand Rich Vanilla flavor) and 1 cup unsweetened vanilla almond milk. Poured over the 'cereal' as the mi ...[Read More]
Here is one of my favorite dinners to make! I usually make a whole bunch so that I can easily eat them throughout the week. Here I used 5 lbs chicken breasts, 3 bell peppers (2 yellow, 1 orange), 3 yellow squash, 2 large red onions, about 10 baby portabella mushrooms. You could use any kind of vegetables, these are just the ones I happened to have in my fridge. I cut the chicken into chunks the da ...[Read More]
This is how I will sometimes prep my sweet potatoes for the week. I cut them into slices and sprinkled cinnamon and truvia on top (I cut up 5 sweet potatoes and only needed to use two packets of truvia). I only did one side but you could flip them and put the cinnamon/truvia on both sides if you wanted. I cooked them for about 35 minutes on 350. Once they were cooled I portioned them out and put t ...[Read More]
My favorite way to cook Brussels Sprouts! About one lb of Brussels Sprouts, cut ends off and cut in half. Put on foil then sprinkle 1 Tbsp olive oil and 2 Tbsp balsamic vinegar. Sprinkle black pepper, garlic powder, and sea salt on top. Cook at 400 degrees until edges are brown and crisp. Mmmmmm I could eat the whole tray cooked this way!
Most people eat ice cream for their late night snack, I like this egg white PB hot mess-looking meal 🙂 I just blended six egg whites, stevia, unsweetened coca powder, almond milk together in the blender, cooked it like a pancake and added 1 Tbsp natural pb. Yum!! I try to eat every three hours. So if I end up staying up late I continue to eat every three hours to keep my metabolism revved up, I ju ...[Read More]
If you like salt and vinegar chips you will love these. Just like salt and vinegar chips, you can't stop at just one! (If you don't like salt and vinegar chips you can still make these just lightly mist with olive oil instead of the vinegar bath). This is how I did it: Preheat oven to 375 I bought a bag of pre-cut Kale just because it is easier, but if you buy it in the bunch just chop the bunch i ...[Read More]
Here is another sort of funky way to eat your egg whites at night but I think it tastes good! It sort of tastes like one of those chocolate oranges you get at Christmas time. Sort of. 🙂 I went and saw The Vow tonight (so so so so good btw! My crush on Channing Tatum just got that much bigger) 🙂 the movie was sold out so we had to go to the later viewing. I didn't get home until 1:30am and was star ...[Read More]
Dinner tonight. Two 4oz wild flounder filets (I get mine frozen at Costco). Cooked on stovetop in lime juice, oregano, chili powder, and black pepper. Asparagus, red pepper, and mushrooms thrown in pan for last few minutes. Brown rice on side. Yum!! Was really fast to cook up too.
